Australia Day Celebrations
at around evening time of January 26th, 2007“Australia Day is celebrated on the twenty-sixth day of January and marks the day in 1788 when Captain Arthur Phillip arrived in Botany Bay to found the colony of New South Wales, and became its first Governor.
It is a day when Australians gather in every part of each state and territory of the Commonwealth, and overseas, to celebrate what is truly great about Australia and being Australian.
It is a day when we reflect on what we have achieved and what we can be proud of in our free and democratic nation.
It is a day to celebrate our cultural diversity and to acknowledge the contribution of both indigenous Australians and those who have come from more than 150 countries to make Australia their home.
In the UK, it is also a day to recognise the benefits we have gained from our British heritage and appreciate the close links that are retained between our nations.”

An all time Australian Favourite are Lamingtons, here’s a recipe with a twist…CHOCOLATE.
Chocolate Lamingtons
Preparation time: 40 minutes
Total cooking time: 20 minutes
Makes: 60
4 eggs separated
2/3 cup caster sugar
2 tblsp cocoa powder
1/4 cup cornflour
1/4 cup plain flour
1/3 cup self raising flour
Chocolate Icing:
3 cups icing sugar, sifted
1/2 cup cocoa powder, sifted
90g butter, chopped
3/4 cup boiling water
1 tblsp instant coffee powder
2-3 cups dessicated coconut
Method:
Preheat Oven to moderate 180 C[gas mark 4]. Line a 20 x 30cm rectangular lamington tin with baking paper.
Using electric beaters, beat egg whites in small bowl until soft peaks form. Add sugar gradually, beating well after each addition, until sugar has dissolved and mixture is thick and glossy. Add egg yolks; beat until just combined. Transfer mixture to large bowl; gently fold through sifted cocoa and flours.
Pour mixture into prepared tin; smooth surface. Bake 20 minutes or until cake is springy to the touch. Stand cake in tin 5 minutes before turning onto wire rack to cool. Cut cake into 3cm squares.
Chocolate Icing Method:
Combine icing sugar and cocoa in medium bowl. Stir in combined butter, water and coffee; mix until smooth. Place coconut on large plate. Using two forks, dip cake squares, one at a time, into chocolate icing mixture, roll in coconut and stand on wire rack. Repeat with remaining squares.
Allow lamingtons to stand for about 1 hour before serving….if you can wait that long. Enjoy!
